Pulled Barbecue Pork Sandwiches: A Memorial Day Recipe for the Grill-less

If you don't have a grill, pulled barbecue pork sandwiches slow-cooked in the Crock-Pot are a great alternative for a Memorial Day get-together. I like serving the shredded pork on little rolls (with tons of extra barbecue sauce for dipping) because, really, who doesn't love mini sandwiches?

Pulled Barbecue Pork Sandwiches

  • 2 pounds boneless pork top loin
  • 1 1/2 cups onions, chopped
  • 1 cup soda, diet soda, or beer
  • 1 to 1 1/2 cups of your favorite barbecue sauce

Place pork in slow cooker. Combine all other ingredients in bowl and pour over pork. Cover. Cook on high 4 to 6 hours or until meat is very tender. Shred pork with two forks. Stir pork back into sauce. Serve on mini buns.
