What's the best way to make my healthy banana bread a tad less healthy? By adding chocolate chips, of course! But ... mmmmmm ... can you blame me?

Chocolate Chip Banana Bread

 

  • 3 ripe bananas
  • 2 eggs, beaten light
  • 2 cups whole wheat flour
  • 3/4 cup brown sugar, or slightly less honey or honey with a little molasses
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1/2 cup chopped walnuts
  • 2 tablespoons flaxseed (optional)
  • 1 cup chocolate chips

 

Preheat oven to 350 degrees F. Mash bananas. Combine with eggs in large bowl. Stir in remaining ingredients. Bake in greased loaf pan 40 to 60 minutes, depending on size, until toothpick inserted in center comes out clean. (I made three mini loaves, and they took about 40 minutes to cook.)
