Watermelon, Feta, and Mint Salad for Summer

watermelon saladThe first time I saw this fruit salad at a summer barbecue, I approached it with slight trepidation -- watermelon, feta cheese, mint, and black olives? What an odd combination!

As it turns out, the sweet and salty flavors couldn't go more perfectly together. Now it's a summer staple!

Watermelon, Feta, and Mint Salad from Nigella.com

  • 1 small red onion
  • 2 limes
  • 1 seedless watermelon, about 3 pounds
  • 1 cup feta cheese
  • 1 bunch fresh flat leaf parsley, chopped
  • 1 bunch fresh mint, chopped
  • 3 tablespoons olive oil
  • 1 jar pitted black olives, diced
  •  Pepper

Peel and halve red onion, cut into very fine half-moons, and put in a small bowl to steep with lime juice. Remove rind from watermelon and cut into chunks. Crumble feta into small pieces. Combine watermelon with feta, fresh herbs, olive oil, diced olives, and red onion. Toss gently and season with pepper.
