artichoke dipWe've been talking a lot this week about whole artichokes and how to prepare and eat them. But what about artichoke hearts -- usually sold in a can or jar -- which are easier to eat and make a great addition to pizza, salads, and pasta? They are just as fantastic!

This recipe for Baked Artichoke Dip is one of my go-tos. It's simple to make and usually gone within seconds.

Baked Artichoke Dip

1 16-oz. can artichoke hearts

1 c. Parmesan cheese (grated or shredded)

1 c. mayonnaise

1 tsp. garlic powder

Drain artichokes and dice. Mix with other ingredients. Bake at 350 for 15-20 minutes or until the top is browned. Serve with crackers, bread pieces, or celery sticks.
