Have you noticed that most strawberry recipes are desserts? Rarely, is our ingredient of the week paired with more savory items like meat or cheese. I've been hunting around -- I thought, unsucessfully -- for a non-sweet strawberry recipe, when it dawned on me: Strawberry Spinach Salad with honey-balsamic dressing. We eat this quite often in my house, so I'm not sure why I didn't occur to me before!
Strawberry Spinach Salad
- Baby spinach leaves
- Sliced strawberries
- Goat cheese, crumbled
- Toasted pecan halves or almond slivers
For dressing:
- 4 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon honey
- 1/4 cup olive oil (or more if needed)
- Dried or fresh tarragon (option)
- Salt and pepper to taste
Whisk vinegar, mustard, honey, and tarragon together. Slowly whisk in olive oil until it's incorporated. Season with salt and pepper.
Combine salad ingredients. Drizzle with dressing and toss.
*You can even top with cooked shredded chicken to make it more of a meal.
