The only problem? Once you try it, you'll be a whipped cream snob: Never again will you be content with the artificial spray whipped cream from a can.
This recipe calls for vanilla extract, but when I make real whipped cream, I like to experiment with different flavors. In place of the vanilla, you can also use almond or chai extract, fruit essences, sweet liqueurs, lemon zest, cinnamon -- even cocoa powder! Mmmmm ... strawberries with chai whipped cream sounds delightful ...
Strawberries and Cream
1 lb fresh strawberries, washed and sliced
1 cup heavy cream or whipping cream
3 tablespoons powdered sugar or superfine sugar
1 teaspoon vanilla extract
Combine cream, sugar, and vanilla in (preferably cold) bowl. Beat on low until mixture starts to thicken. Turn mixer to high and beat until soft peaks form. Don't over-mix, or you will have vanilla flavored butter!
Real whipped cream can be covered and stored in the refrigerator for a couple days.
