Banana Walnut Bread for Breakfast

Here's what I do for a healthy breakfast:

I bake Banana Walnut Bread on the weekends, and eat a slice or two with a piece of fresh fruit the rest of the week. I love it spread with a little low-fat cream cheese -- a perfect start to the day that lasts me all the way to lunch!

Banana Walnut Bread

3 ripe bananas

2 eggs, beaten light

2 c. whole wheat flour

3/4 c brown sugar, or slightly less honey or honey w/ a little molasses

1 tsp salt

1 tsp soda

1/2 c. chopped walnuts

2 tablespoons flax seeds (optional)

Mash bananas. Add eggs. Stir in dry ingredients. Bake in greased loaf pan at 350 for 40-60 minutes, depending on size, until toothpick inserted in center comes out clean. I made three mini loaves, and they took about 40 minutes to cook.
