Pasta With Asparagus, Parmesan, and Pine Nuts

Last night I went over to my sister's for dinner, and she whipped us a healthy pasta dish with asparagus, Parmesan cheese, and pine nuts in less than 20 minutes.

Did she know that asparagus is our Ingredient of the Week? I think she might have had an inkling ...

Pasta with asparagus, Parmesan, and pine nuts (adapted from the April issue of Real Simple)

1 box whole wheat spaghetti or linguine

2 lbs asparagus, washed, trimmed, and cut into 1-inch pieces

1/4 cup pine nuts

2 cloves garlic, diced

OIive oil

Salt and pepper

Parmesan cheese, shredded

Cook pasta according to directions. Drain, reserving about 1 cup of the hot pasta water, and set aside.

In large skillet, toast pine nuts until lightly browned, being careful not to burn them. Set aside.

Heat about 4 tablespoons olive oil in skillet. Saute garlic for about 30 seconds. Add asparagus and saute until tender -- about 5 minutes. Add pasta and pine nuts to skillet and toss to combine, adding more olive oil and/or some of the reserve pasta water if there's not enough "sauce." Season with salt and pepper. Top with grated Parmesan.
