Recently, I asked my mom for her Asparagus and Cheese recipe that she makes every Easter. It's one of my favorite things about the holiday: fresh, tender asparagus with melted Swiss cheese (or you can use goat cheese). My sister and I have been known to fight over the leftovers.
THEN, I found out what she puts in the dish to make it so good: An entire stick of butter.
No wonder I always gain so much weight in April. Seriously, Mom, are you trying to kill me with all that butter?
I bugged my mom until she told me how to make the dish with half the amount of butter. Here's the recipe:
Asparagus and Cheese Side Dish
- 2 lb asparagus, trimmed
- 1/2 stick butter, melted
- 1 package dry onion soup mix
- 2-3 slices Swiss cheese or 6 oz goat cheese
Microwave asparagus in a little water until crisp-tender. Drain and arrange in single layer a lightly greased, shallow baking dish.
Mix onion soup into melted butter; spoon over asparagus.
Place cheese over middle of asparagus spears. Bake at 350 until cheese melts.
