Had your fill (and some) of St. Patty's Day beer? If hair of the dog isn't your style (gag), use your leftover tradish Irish beer for a tasty dessert. These crave-worthy cupcakes incorporate thick, chocolately Guinness and are the perfect mid-morning, noon, and night snack.
Chocolate Guinness Cupcakes (recipe adapted from Karott)
1/4 cup cocoa powder (to dust the baking pans)
2 sticks butter
1 cup Guinness
2/3 cup Dutch process dark cocoa powder
1 teaspoon salt
2 cups unbleached flour
2 cups sugar
1 1/4 teaspoon baking soda, sifted
2 large eggs
1/2 cup sour cream
1 can of cream cheese frosting
Heat oven to 350. Lightly dust a muffin pan with cocoa powder. In a heavy saucepan, heat butter, Guinness, and cocoa powder until melted. Let cool. Combine dry ingredients and add the Guinness-cocoa mixture, and beat thoroughly for 1 minute on medium speed. Add the eggs and sour cream and beat 2 minutes on medium speed. Pour batter into cupcake pan and bake for 15-20 minutes or until a toothpick inserted into the middle comes out clean. Let cool completely. Top with a thin coating of cream cheese frosting and top with a sprinkle of cocoa powder. Mmmm!
