Green eggs and ham is the perfect green meal for St. Patrick's Day or anytime you want to pay homage to Dr. Seuss and Sam-I-am.
Anyone can add green food coloring to eggs, but this recipe tints the eggs naturally with spinach and basil, which you can't really taste once it's cooked. I also find that you're more likely to get a greener color if you use egg whites instead of whole eggs -- plus it's healthier!
Green Eggs and Ham (serves 4-6)
1 16-oz carton egg whites (or whites from 10 large eggs)
1/2 cup milk or cream
1/2 cup shredded mozzarella cheese
3 cups fresh spinach leaves and/or basil
Salt and pepper
2 slices ham, cut into thin strips
In a food processor, puree spinach and basil. Whisk together egg whites, milk/cream, cheese, and salt and pepper in large bowl. Stir in spinach/basil and ham strips. Spray large oven-safe skillet with cooking spray and heat on stove-top, medium heat. Pour egg mixture into skillet, and let cook for 5-8 minutes until it starts to harden. Move skillet to oven and bake at 350 until cooked through -- about 25-30 minutes.
