On this fall day, Jennifer and her family bake their favorite pumpkin chocolate chip muffins and Jen generously shares her recipe with us:
On this fall day, the kids and I made an autumn favorite (or anytime, really): pumpkin chocolate chip muffins. I've been making this recipe for about 15 years, adapted from a recipe passed on by a friend way back in our pre-children days.
This is the snack my kids request the most when we need to bring something in to share for a school treat or a potluck. It's easy to keep the ingredients in the cupboard to whip these up at the last minute. I hope you enjoy them as much as we do.
Pumpkin Chocolate Chip Muffins
makes 24 generous muffins
1 cup (2 sticks) butter, melted
1 can pumpkin
2 cups sugar
3 1/3 cups flour
2 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1/2 tsp cloves
2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 bag milk chocolate chips (we like Ghirardelli)
Preheat the oven to 350 degrees. Grease or line 2 muffin pans.
Melt the butter over low heat and allow to cool slightly. Beat butter together with the can of pumpkin and the eggs until smooth. Add the sugar and stir well. Sift the dry ingredients together (in theory, anyway -- I never sift and it always seems to work out fine). Feel free to adjust the spices to your liking; just go for a basic pumpkin pie flavor. Fold the dry ingredients into the wet ingredients, stirring gently. Fold in chocolate chips until just blended.
Fill muffin pans 3/4 full. Bake 20-25 minutes, depending on your oven.
